Directions: 1 c Beef broth
1/2 c Soy sauce
3 oz Bourbon
1 Clove pressed garlic
1/2 ts Ground ginger
1/4 c Worcestershire sauce
2 TB Mesquite honey

Combine ingredients in a glass jar, shake, pour over a 3 to 4-pound, 2-inch
thick sirloin and let marinate several hours, at room temperature, turning
several times. Broil over mesquite, or charcoal with mesquite chips. From:

both sides with an even coating of corn oil. Dust them on both sides with a
generous amount of season salt. Drizzle each steak with wine or juice. Seal

1 ts Freshly ground black Ginger-soy marinade Mix all ingredients together in a small bowl. Use to marinate meat, fish,
chicken for an hour or overnight, turning to coat from time to time.
Remaining marinade may be used to baste meat while is cooking.
Makes 3/4 cup = 6 servings.
Food New york steak and prawns Smothered round steak Alex Patout says, "Smothering is a multipurpose Cajun technique
that works wonders with everything from game to snap beans. It's
similar to what the rest of the world knows as braising--the
ingredients are briefly browned or sauteed, then cooke Lemon marinade. 15 ml 1 tbsp sunflower oil. 1 Clove garlic, crushed. Juice of half a lemon.
Ground black pepper. 30 ml 2 tbsp chopped fresh herbs, or 2,5 ml half tsp
dried mixed herbs.
Mix all ingredients together. Leave to marinade for at least half an hour.
Ginger-lime marinade Mix all ingredients.
Lemon soy marinade Combine, add meat and chill from 1 hour to overnight. Make enough for about
one pound of meat.
Chicken marinade #2 In a large screw-top jar, combine wine, oil, soy sauce, Worcestershire
sauce, mustard and pepper to taste. Cover and shake until blended.
Arrange chicken in a large plastic bag set in a shallow pan. Pour
