Ingredients:
1 golden delicious or granny smith apple
1/3 sliced leeks
8 Ounce(s) chicken broth
2 pork roast
13/2500 Quart(s) olive oil
1 Clove(s) minced garlic
2 rosemary, fresh
87/2000 Pound(s) whole wheat flour
2 white wine vinegar
417/10000 Ounce(s) salt
217/10000 Ounce(s) black pepper
Directions:
Core and chop the apple.
In a small bowl, stir together rosemary, garlic and oil.
Drizzle mixture over all sides of roast; rub in with your fingers.
Place roast on rack in a shallow roasting pan. Insert meat thermometer into center of roast.
Roast, uncovered, in a 325 oven for 1 to 1.5 hours or until meat thermometer registers 155.
Cover with foil and let stand 15 minutes before slicing.
Reserve 2 tablespoons of pan drippings.
In a mediaum saucepan, bring 3/4 cup of the broth to boiling.
Add leek and apple; reduce heat. COver and simmer for 4 minutes or just until tender.
Stir together remaining 1/4 cup broth and the flourl. Stir into leek mixture. Stir in reserved pan drippings, vinegar, salt and pepper.
Cook and stir until thickened and bubbly. Cook and stir for 2 more minutes.
