Directions: This is a very colorful and tasty arrangement of marinated and then skewered and grilled vegetables and fish. The marinade, called chermoulla, is a blend of fragrant seasonings, oil, and lemon juice. In this version I've suggested my favorite vegetables for kebabs. You should choose your own favorites; some other good choices are eggplants, mushrooms, and onions. special equipment: skewers (if you are using bamboo skewers, soak them in water for 1/2 hr. and fill them out to the ends so the skewers won't burn) Combine the ingredients for the chermoulla. Cut thefish into 1-inch cubes. Similarily, cut the vegetables into 1-inch cubes. Place the fish and vegetables in the chermoulla and marinate, refrigerated, for 2 hours. When you are ready to assemble the kebab, soften the bay leaves in boiling water for several minutes. Alternate the tomatoes, peppers, yellow squash, and fish on skewers. Place a bay leaf occasionally on the skewers next to the fish. Reserve the chermoulla. Cover the broiler pan with foil and place the kebabs on it about an inch apart. Broil for 15 to 20 minutes, basting with the reserved chermoulla, and turning frequently to cook evenly.
Comments: Serve on rice or in pita bread and garnish with lemon wedges and sprigs of mint.

Broiled or grilled fish w/ black-bean salsa Combine first 7 ingredients in medium bowl (jalapeno should be seeded, but not deveined. Black Beans should be drained and rinsed). Season salsa to taste with salt and pepper. (can be prepard 1 day ahead. cover and refrigerate.). Mix chopped avocado into Treska (fish salad) 1. Put TUNA in boiling water with BAY LEAVES, 1 cup of VINEGAR, BLACK PEPPERCORNS and cook for approx 25 minutes.
2. Drain and discard BAY LEAVES and BLACK PEPPERCORNS.
3. Mash TUNA into small pieces with a fork, do not use a meat processor as the pieces Mojan's indian ice cream Blend all the ingredients and transfer to an aluminum pan. Keep the pan in the freezer for 3 hours.Blend ingredients well and transfer to a mold. Keep in freezer until serving.
Skewered fish with honey-mustard sauce Cut the fish into large cubes, put it into a dish and sprinkle with lemon juice, salt and pepper. Cut the onions into wedges, put them into a separate bowl with the mushrooms, add a good grinding of pepper, and oil and lemon juice - in the ratio of 2 tab Indian mayonnaise dressing Heat oil or ghee in a saucepan. Add onion, Curry Powder, cayenne and ginger and cook gently 5 minutes, stirring frequently. Remove from heat and cool. Add the cardamom and cum Anticucho style grilled fish Combine and blend all ingredients, except fish, in blender until smooth.
Marinate fish for 30-40 minutes. Grill over medium hot coals until cooked
through. Baste with the reserved marinade several times during cooking.
Serve with lime wedges, a Indian chicken curry (jhunjhunu) Boil chicken pieces in water. Make thick ginger/garlic paste in a blender, with a little water. In a wok, heat the ghee on high. Add onions, ginger/garlic paste, turmeric, chili, and sautee for one minute. Turn the heat to medium, and add chicken, salt, c West indian marinade In a large bowl, combine all the ingredients to form a paste. Cover and
refrigerate.

Broiled tomato fish fillets Use haddock, cod, perch, sole, orange roughy or snapper Pat fish dry with paper towel. Using a 1/2 tablespoon of margarine, lightly grease a baking dish, just large enough to hold fillets snugly in a single layer. Sprinkle with lemon juice, let stand 5 mi West indian rice and peas with tempeh Saute rice & coconut in the 2 1/2 tablespoons oil for 2-3 minutes,
stirring constantly. Add the water & cinnamon stick. Cover the pot &
bring it to a rapid boil. Do not peek at the rice, but when the steam
starts escaping, turn t Indian lentil sandwich spread (vegan) Combine all of the ingredients in a small sacuepan. Cook gently over low heat, stirring occasionally, for 5 minutes, to allow the flavors to blend. Chill for 1 hour. Alfredo's bbq fish marinade Mix all the above ingredients in deep dish. before grilling.
Tastes very good on fresh Mahi Mahi or Ahi Tuna. Depending on your
preference you can cut back on the salt. I prefer to cut back on the salt
by at least half Anglo-indian curry sauce Heat oil in a heavy, medium-sized skillet over medium heat. Add onions and
stir-fry until onions turn caramel brown, about 12 to 15 minutes. Remove
from heat. Place in a blender with the ginger, tomatoes, cilantro, cayenne
and salt; puree until sm North: kofta kebabs in spicy cream sauce (malai kofta) Kofta, a classic dish of Moghul origin, is one of the most important
preparations of Indian vegetarian cuisine. Traditionally, koftas are
simmered in a delicate sauce and turned into a curried main dish. These

Deep fry at 425 degrees until golden brown. A smal Fish fillets pan-fried with pancetta and caper herb butter 1. In a food processor mix butter, parsley, garlic, capers till the mixture turns into paste.
2. Spread the mixture over one side of the fillets, cover with 2 slices of pancetta.
