Hot Dutch Potato Salad



Ingredients:
4 Slice(s) Onion, cut fine
1/2 Cup(s) Chopped onion
1/2 Cup(s) Chopped green pepper
1/4 Cup(s) Vinegar
1 Teaspoon(s) Mustard; Dry
3 Hard boiled eggs
1/8 Teaspoon(s) Pepper
1 Teaspoon(s) Beer; Any Brand
1 Grainy mustard
1 Quart(s) Hot, cubed, cooked potatoes
1/4 Cup(s) Raw carrot
Directions: Dice bacon and pan fry. Add chopped onion and green pepper. Cook 3 minutes. Add vinegar, salt, pepper, sugar and beaten egg. Cook slightly. Add cubed potatoes, grated carrot and diced hard-cooked eggs. Blend and serve hot. Variation: Add chopped apple with the onion and pepper.
