Directions: Dice bacon and pan fry. Add chopped onion and green pepper. Cook 3 minutes.
Add vinegar, salt, pepper, sugar and beaten egg. Cook slightly. Add cubed
potatoes, grated carrot and diced hard-cooked eggs. Blend and serve hot.
Variation: Add chopped apple with the onion and pepper.

Asparagus salad with vinaigrette chinoise Slice the asparagus in a long diagonal at 2" intervals. Blanch in a
large pot of boiling water for about 4 minutes, until just
tender-crunchy. Drain, refresh under cold running water, then dry
carefully with paper towels.
Whisk together Baked potato bytes 1) Pare and remove eyes from potatoes.
2) Cut into 1 inch pieces.
3) In a large bowl, stir potatoes, onion soup mix and oil together.
4) Place potato mixture in a non-stick baking dish.
5) Bake at 350 degrees for 45 minutes.
Baked potato casserole Mix all ingredients. Pour into casserole and bake 30 minutes at 325F
degrees.
Hutsput (dutch stew) Heat the fat in (what else) a Dutch oven or crock pot until brown. Sear
the meat on both sides til brown. Add water to just cover the meat and
simmer (covered) for approximately one (1) hour. Add carrots, onions and

cumin seed, and fennel seed. Cook over medium heat until fragrant (3 to 5
minutes), shaking pan often. Using back of a heavy spoon, coarsely crush
seeds. Remove from heat and Potato vegetable latkes Squeeze shredded vegetables dry. Blend with remaining ingredients.
Fry in minimum amount of oil, 2 tbs per cake. Serve with sour cream
and/or applesauce.

bacon over vegetables. Top with 1/2 cup cheddar cheese; set aside. In a
mixing bowl, combine Sweet potato stew * Cook everything in a pot at medium to high heat until water is absorbed.
* Serve.
* Alternate: Use gourds such as squash or pumpkin instead of sweet potato.
