Hot Cross Buns



Ingredients:
2/3 Cup(s) Apples; chopped
1 Teaspoon(s) Dark molasses (treacle)
2 Package(s) Uncooked oats +
5 Cup(s) Flour, more or less
1 1/2 Cup(s) Sharp cheddar cheese; grated
1/2 Cup(s) Butter or margarine
2 Eggs
1 Cup(s) Seedless raisins
3/4 Cup(s) Self rising flour
Directions: 1. In a large bowl, combine sugar, salt, yeast and 1 1/2 cups flour. In 1 quart saucepan over low heat, heat milk and butter or margarine until very warm (120 to 130~). With mixer at low speed, beat liquid into dry ingredients until blended. Increase speed to medium; beat 2 minutes. Beat in 1 egg and 1 cup flour to make a thick batter; continue beating 2 minutes, scraping bowl often. Stir in raisins and enough additional flour (about 2 to 2 1/2 cups) to make a soft dough. 2. Turn dough onto floured surface and knead until smooth and elastic, about 10 minutes, adding more flour while kneading. Shape dough into a ball, and place in greased bowl, turning dough over so that top is greased. Cover and let rise in a warm place (85~), free from drafts, 1 hour or until doubled in bulk. 3. Punch down dough; turn onto floured surface; divide into 15 equal pieces; cover with bowl and let rest 15 minutes. Grease a 13x9 inch baking pan. 4. Shape dough into balls; place in baking pan. Cover; let rise until doubled, about 1 hour. 5. Preheat oven to 350~. In a small bowl, beat remaining egg. Cut a cross in each bun and brush tops with egg. Bake 25 minutes or until buns are golden. 6. Remove pan from oven to wire rack and cool 15 minutes. Mix powdered sugar and milk to make icing. Spoon into decorating bag with medium writing tip.
