Hoppin John Salad



Ingredients:
2 15.5 oz., rinsed and drained black-eyed peas, canned
1 chopped green bell pepper
4 diced celery
2 chopped onion, yellow
1/2 Ounce(s) canola oil
1/2 smoked, 1/2 inch thick ham
417/10000 Ounce(s) hot pepper sauce
1/3 Bunch(s) chopped parsley, fresh
Directions: Cut the ham into 1/2 inch cubes. Heat oil in a large nonstick skillet over medium heat. Add onion, celery and black pepper; cook until softened, 8 to 10 minutes. Stir in ham, black-eyed peas, and hot pepper sauce; cook until heated through, about 5 minutes more. Stir in parsley just before serving and season to taste with black pepper. Serve warm or at room temperature.
