Ingredients: 20 Ounce(s) Spinach (frozen), chopped 2 Cup(s) Herb stuffing mix 3/4 Cup(s) Garlic, finely minced 1 medium Onion, finely chopped 3 Meat, ground (mixture of beef and pork) 1/4 Pound(s) Butter, melted |
Directions: Preheat oven to 350 degrees F. Thaw spinach and remove excess liquid. Add
remaining ingredients (stuffing mix, parmesan cheese, garlic, onion, eggs
and butter) and mix well. Form the mixture into small balls and place on a
baking sheet. Bake for 15 minutes at 350 degrees F.
NOTES:
* A delicious appetizer or vegetable dish -- I learned this recipe from my
mother. I think she originally found it in the _Troy (NY) Times Record_.
Yield: Serves 12-20.
* These can be made up ahead of time and frozen. If frozen, increase
cooking time by 10-15 minutes.
* Herb stuffing mix is a commercial preparation of bread crumbs and herbs
and seasonings that is packaged for stuffing a turkey or chicken. You can
make your own if you like.
* This recipe makes about 80 appetizer-size balls, or about 40 larger
balls to use as a vegetable dish at a meal.

Herbed broccoli 1. About 20 minutes before serving, cook broccoli as package label directs,
in small amount of boiling, salted water. During cooking, slit any thick
stems, so broccoli will cook more readily. 2. Drain broccoli. Arrange on
serving platter. 3. Co Veggie meat balls / meat loaf You can easily make this into a meatloaf, if you are pressed for time. Bake in an 8cm x 26 cm dish for 45 min or till ready.

Spinach & lentil soup Wash & drain lentils. Combine with ater, bring to a boil, add salt, reduce
heat & simmer, covered 45 minutes to 1 hour. Heat oil in a large skillet,

30-min: herbed pork cutlets In shallow dish, lightly beat egg. In separate shallow dish, stir together
