Ingredients: 4 Cup(s) Fresh Peppers, chopped fine, 3 red peppers |
Directions: 3 x green peppers,
5 x Jalapeno peppers
3/4 c Pure Apple Cider Vinegar
1 x Box Light Fruit Pectin
3 1/4 c Sugar, divided
In a large saucepan, combine chopped peppers and vinegar. In a small
bowl, mix pectin crystals with 1/4 cup of the sugar. Slowly stir
pectin mixture into the peppers. Cook and stir over high heat until
the mixture comes to a full boil. Stir in remaining sugar. Cook and
stir until mixture returns to a boil. Continue to stir and boil hard
for 1 minute. Skim off foam. Remove from heat. Stir and skim for 5
minutes to cool slightly. Pour quickly into sterilized jars. Seal
while hot with new 2-piece lids or 1/8 inch hot parrafin. Makes about
5 cups.

Haberno pepper sauce (aka "agent orange") Saute the onion and garlic in oil until soft; add the carrots with a
small amount of water. Bring to a boil, reduce heat and simmer until
carrots are soft.
Place the mixture and raw chilies into a blender and puree until
smooth. Don' Wild mushroom and bell pepper saute Melt butter in heavy large skillet over medium heat. Add bell peppers and saute until tender, about 8 minutes. Stir in mushrooms. Season to taste with salt and pepper. Saute until mushrooms are golden brown, about 5 minutes. Mix in tarragon, cook 1 minute Red pepper sauce Make roux with flour and butter. Cook 10 minutes. Add cream slowly. Add
rest of ingredients and simmer for 1 minute.
Process. keep warm.
Serve with sauted fish or blackened chicken.
Apple pepper slaw In a small bowl stir together the yogurt, salad dressing mix, and honey
until blended. Thin with a little water if necessary. Cover; refrigerate
until ready to serve.

Heat oil in a large skillet over medium heat. Add peppers, shallot,
ginger, and cumin; cook, stirring, until peppers are slightly softened,
about 8 minutes.
Stir cornstarch Radish and cilantro relish Mix all ingredients in glass or plastic bowl. Cover and refrigerate
at least 1 hour.
