Garlic sauce Peel and crush the garlic, the entire head. Remove the crusts from
the white bread, and place the crustless bread in a mixing bowl. Add
the garlic along with the olive oil and vinegar. Let this soften for

Buffalo chipotle sauce Blenderize thoroughly. Heat thoroughly, bring to a boil, simmer until the desired thickness is obtained. If you are using the canned chipotles as the recipe calls for, you may can in a water bath canner for 15 minutes using 1/2 pint jars.
Peanut sauce Heat the oil in a small saucepan over high heat. Add the garlic and hot peppers and cook until softened, about 1 minute. Add the soy sauce, coconut milk, peanuts, sugar, and rice wine vinegar, mix well and bring to a coil. Remove from the heat.
Alligator sauce piquant Make roux with 1 cup oil and 1 cup flour and cook until golden. Saute
onions in roux until brown. Add tomato paste and sugar and cook about 5
minutes. Add bell pepper, celery, garlic, mushrooms and stir well. Add
