Simmer vinegar, salt and peppers for 5 to 10 minutes.
Process in food processor or blender. Seal in small sterilized canning jars and place in a cool, dark place to age for about 3 months. Strain a portion of Hot pepper spread Place cream cheese on serving plate. Top with jelly; sprinkle with

Carribean ginger pepper sauce In a saucepan, blend the salt, cornstarch, sugar, lime juice, and
pineapple juice until smooth.
Premix and gradually stir in the water, soy sauce, ginger, Jalapeno,
and Cayenne. Cook over medium heat, stirring constantly unyil the
sauce is t Corn and bell pepper chowder Blend 2 cups corn and 1 cup broth in blender until almost smooth. Melt butter in large saucepan over medium-high heat. Add pepper, potato and shallots; sautee 5 minutes. Add 2 cups corn, 1 cup broth, and puree from blender. Bring to simmer. Reduce he Red pepper sauce Make roux with flour and butter. Cook 10 minutes. Add cream slowly. Add
rest of ingredients and simmer for 1 minute.
Process. keep warm.
Serve with sauted fish or blackened chicken.
Hot pepper dressing Combine vinegar, oil, red pepper flakes, hot sauce, garlic powder and
black pepper in a small bowl or cruet. Mix well. Use as a dressing
for you favorite salad.
Prep. time: 10 minutes
Spicy lentil and pepper sauce for pasta or rice In a deep pot, saut onions, garlic, and peppers in heated olive oil. Stir
often. Cover and reduce heat to low, add tomato and juice, and simmer for
20 minutes. Add cooked lentils and seasonings (including chilies). Heat
thoroughly before serv Roasted pepper and snow pea salad Preheat broiler or prepare a charcoal grill. Place peppers under broiler or on grill and cook on all sides until skin is well charred.
When cool enough to handle, split peppers in half, core and discard charred skin. Cut peppers lengthwise into thin str Stuffed pepper soup In a soup pot, brown beef; drain.
