Anglaise sauce In a saucepan, over high heat, whisk the cream together with the sugar and
vanilla bean. Bring to a simmer and remove from the heat. In a bowl beat
the egg yolks until thick and frothy. Temper the egg yolks by stirring just
1/4 cup of the sauce in Caper sauce (quick method) Mix all together, refrigerate. Goes well with fish.
Jalapeno mustard Toast coriander seeds in a dry skillet or place them in a flat dish
and microwave on High for 4 to 5 minutes. Crush the mustard and
coriander seeds slightly in a mortar or blender, them mix them and
the powdered mustard into the water and let Grilled beef tenderloin with roasted garlic sauce For sauce:
Preheat oven to 350F. Combine milk and garlic in small saucepan. Simmer,
uncovered, over medium heat 10 minutes. Drain; discard milk. Place garlic
heads, cut side up, in small ovenproof dish. Pour 1/2 cup oil over. Cover
dish tightly with foil. Broiled tomatoes with dill sauce Cut tomatoes in half and core. Dot tomato halves with butter and broil 3
inches from heat for 5 minutes. Make sauce with remaining ingredients and
spoon on tomato halves. Sauce may be served at room temperature or heated.
Yield: 6 servings.
Halibut with swiss chard and ginger cream sauce Brush fish with oil. Mix ginger, shallots and garlic in heavy small
saucepan. Rub 1 teaspoon ginger mixture over each fish fillet. Add clam
juice and wine to remaining ginger mixture in saucepan. Boil mixture until
liquid is reduced to 1/4 cup, about 15 m Barbecue sauce for chicken 1. Melt butter.
2. Add everything but the lemon juice and bring to a boil.
3. Remove from heat and add lemon juice.
4. You can rewarm if needed, but don't boil it after you add the lemon juice.
Honey pecan salmon Mix together mustard, butter and honey in a small bowl; set aside. Mix together bread crumbs, pecans and parsley in a small bowl; set aside.
