6 poblano peppers
1 1/2 C. diced chorizo
2 T. olive oil
1/2 C. diced onions
2 cloves garlic, finely minced

4 canned chipotle chiles in adobo sauce, diced
1 tsp. cumin
1/2 tsp. oregano
1 C. c Ham stuffed manicotti Cook manicotti according to package directions; set aside.
In a large skillet, saute onion in oil until tender.
Remove from the heat.
Add ham, mushrooms, half of the Swiss cheese and Parmesan; set aside.
In a saucepan, saute green pepper in butter until t Stuffed squash Preheat the oven to 350 degrees. Cut the squash in half lengthwise and
scoop out the pit and seeds.
