Grilled Southwestern Chicken Breasts



Ingredients:
4 Pound(s) skinless halves chicken breast
74/6789 Pound(s) minced garlic
1 Ounce(s) chopped green chili
1/3 juice lime
1/6 Quart(s) vegetable oil
8 Pound(s) cheddar cheese
1 salsa
Directions: 1. In 9" square pan stir together all marinade ingredients; oil, lime juice, chilies, and garlic. 2. Add chicken breasts; marinate, turning once, in refrigerator at least 45 min. 3. Meanwhile, prepare grill placing coals to one side; heat until coals are ash white. 4. Make aluminum foil drip pan; place opposite coals. 5. Remove chicken from marinade; drain. 6. Grill chicken 7 minutes; turn. 7. Continue grilling until fork tender (6-8 min.) 8. Top each chicken breast with 2 slices of cheese. 9. Continue grilling until cheese begins to melt (1-2 min.) 10. Remove from grill and serve with salsa.
