Grilled Pesto-Stuffed Chicken with Lemon Butter



Ingredients:
4 chicken breast halves
4 Tablespoon(s) pesto
4 Tablespoon(s) unsalted butter
2 Tablespoon(s) lemon juice,freshly squeezed if avail.
Directions: Run fingers between skin and flesh of breast to make a pocket, being careful not to tear or remove skin. Stuff 1 tablespoon of pesto sauce into each pocket. Secure with toothpicks if necessary. Heat butter and lemon juice in a small saucepan until butter melts. Place chicken breasts on a grill over medium-hot coals and cook 30-40 minutes, turning and basting with lemon butter every 10 minutes or until chicken is tender and juices run clear when pierced in the thickest part.
