caps. Finely chop enough stems to measure 1/3 cup. Reserve mushroom caps.
Melt 2 tablespoons margarine in 10-inch skillet over medium-high heat. Cook
chopped mushroom stems, Grilled asparagus Snap off tough ends of asparagus. Combine all ingredients in ziploc bag -- marinate 30 minutes. Grill on rack coated with cooking spray for five minutes each side.
Tuna fish, mushrooms, and celery Drain tuna well. Discard liquid and set tuna fish aside for later use.
Place margarine in a 1 1/2 quart saucepan. Melt over moderate heat. Add
celery and mushrooms and cook, stirring occasionally, over moderate heat

low heat for 5-10 minutes until they shrink slightly and the juices start

Cut sweet potatoes into fries 1/3 inch thick by 2 to 4

imitation crabmeat, thawed *** Artichoke hearts should be drained and
cut into quarters. Use one **** Flour tortillas should be 7 to 8
inches in diameter and be warm. Prepar Grilled eggplant towers with tomatoes and mozzerella Heat your grill to medium.
Places the eggplant slices on a large baking sheet. Brush oil over the slices. Season with salt and pepper.

saucepan over moderately low heat, stirring occasionally, until softened,
about 3 minutes. Add tomatoes, lemongrass, salt, and pepper and bring to a
boil, stirring. Reduce heat and cook Wild rice and barley salad with wild mushrooms and persimmon In a large saute pan or skillet, combine the leeks, garlic, fennel, mushrooms, sherry/wine/stock, thyme, and salt and cook uncovered over medium heat until the mushrooms are just tender, about 5 minutes. The leeks and fennel will still be fairly firm. Let Grilled lemon-herb marinated chicken Put chicken in a large bowl with remaining ingredients and salt to taste
and turn chickens to coat. Marinate chickens, covered and chilled, turning
occasionally, 1 day.
Prepare grill for cooking.
Discard marinade and season chickens with salt and pepper. Wild mushrooms with shallots and soy sauce If you are using portobello mushrooms, remove stems (may be saved for stocks) and clean. If you are using shiitake mushrooms, remove stems (may be saved for stocks) and clean.
Brush mushroom caps with oil and grill or broil until brown - 1 to 2 minutes pe Spicy stir-fried sesame chicken with green beans and shiitake mushrooms 1. Whisk chicken broth, soy, sherry, chili sauce, sugar, cornstarch, 2 teaspoons sesame seeds, 1 teaspoon sesame oil, and 1 teaspoon garlic in small bowl to combine; set aside. Combine remaining 2 teaspoons garlic, ginger, and 1 teaspoon peanut oil in sma Crab or shrimp stuffed mushrooms Remove stem from mushrooms and saute the caps, topside down, in butter for
1 minute. Place in ovenproof dish and set aside. Mix crab or shrimp with
mayonnaise, shallots and mustard. Fill mushrooms with equal amounts of

2. Cut 2 tbs butter into 1/2 tbs slices, place on one side of bread, press into bread firmly so it sticks by itself.

Grilled pork tenderloin with peach barbeque sauce For sauce:
Saut chopped bacon and chile de rbol in heavy large saucepan over medium
heat until bacon is crisp. Add chopped onion and garlic cloves; saut until
onion is translucent, about 5 minutes. Add Worcestershire sauce and
crushed peppercorns; stir 1 White bean salad with grilled shiitake, shallots and smoked sturgeon Mix the cook beans with the shallots, the mustard and the olive oil, make sure that the dressing just coats the beans but that it is not runny. Season the shiitake caps and grill them, until tender. Mix 1/2 of the sturgeon with some of the bean salad and Grilled artichokes Trim the stems & the spiny tips off the artichoke, slice in half lengthwise
& rinse well under running water. Scrape out the choke. Using half a lemon
for each artichoke, squeeze the lemon juice over all the cut sides.

Grilled chicken moroccan style Whisk first 8 ingredients in large glass baking dish. Add all the chicken; turn to coat. Cover with plastic wrap; chill 4-6 hours.
Prepare grill (medium heat). Place marinade-coated chicken on grill. Grill chicken until just cooked through, occasional Grilled teriyaki chicken 1. Prepare marinade ingredients; oil, soy sauce, honey, onion, garlic, and ginger.
2. Pound chicken between waxed paper until relatively flat.
3. Marinate chicken at least 12 hours.
4. Grill on gas grill until done.
Grilled mustard turkey Preheat broiler. Coat broiler pan with non-stick cooking spray. Rince
turkey and pat dry. Mix together mustard, mayonnaise and lemon juice
in a small bowl. Coat one side of the turkey with half of mustard
mixture. Broil about 4 inches from heat source Chicken in red wine with mushrooms Heat butter in pan, add chicken, cook until browned all over; drain on
paper towel. Add bacon, onions and garlic to same pan, cook,
stirring, until onions are browned and bacon is crisp. Stir in wine,
stock, brandy, paste, bay leaf and thyme.
Steaks with red wine mushrooms Heat the oil in a frying pan over medium heat. Cook the steaks for 3
minutes each side or until cooked to your liking. While the steaks are
cooking, heat the butter in a frying pan over medium heat. Add the onions
and garlic and cook for 1 minute. Add Grilled honey mustard chicken breast 1. Whisk together in bowl: mustard, lemon juice, Worcestershire sauce, garlic, honey, and pepper.
2. Pound out chicken breasts and add to mustard mixture, coating both sides well.

lemon juice and liqueur, if using. Add scallops, and toss to coat. Slide
