Ingredients: 1/2 (2 ounces) feta cheese 2 Tablespoon(s) light or regular mayonnaise 2 plain fat-free yogurt 3 garlic, minced 1/2 coarsely gound black pepper 5 (1/2-inch-thick) red onion 1 to 1.5 lbs ground round or ground chuck 2/3 Cup(s) fresh breadcrumbs 1/3 Cup(s) bottled roasted red bell peppers, chopped 1/4 chopped fresh parsley 1/4 salt 1 (10-ounce) frozen chopped spinach, thawed, drained, and squeezed dry 1 large egg,lightly beaten 5 sourdough or other sandwich buns 1 Teaspoon(s) dried oregano |
Directions: To prepare aioli, combine first 3 ingredients and 1 clove minced garlic and 1/4 teaspoon black pepper in a food processor. Pulse 1 minute or until smooth. Cover and chill.
Prepare grill or broiler.
Place onion slices on a grill rack or broiler pan coated with cooking spray, and cook for 2 minutes on each side. Set aside.
To prepare the burgers, combine the beef and the next 7 ingredients and the remaining garlic and black pepper in a large bowl. Divide the beef mixture into 5 equal portions, shaping each portion into a 1/2-inch-thick patty. Place patties on grill rack or broiler pan coated with cooking spray, and cook for 6 minutes on each side or until burgers are done. Spread about 1 tablespoon aioli over the top half of each bun. Place patties on bottom halves of buns and top each with 1 onion slice. Top with tomato slices and lettuce leaves if desired. Makes 5 sandwiches.
