Greek Salad



Ingredients:
3 large ripe chopped tomato
1 Ounce(s) salt
1 Ounce(s) black pepper
2 Ounce(s) olive oil
13/625 Quart(s) lemon juice
163/625 Ounce(s) oregano
1 small chopped red onion
2 peeled and chopped cucumber
326/625 Pound(s) crumbled tofu
163/1250 Pound(s) greek, sliced black olives
Directions: In a salad bowl, combine tomatoes. cucumber and onion. Sprinkle with oil, then with lemon juice, oregano and salt and pepper to taste. Mix in crumbled tofu and olives. Cover for several minutes to let the tofu absorb some of the flavor. Eat.

Comments: Tofu replaces feta cheese. A hard tofu block with herbs is good.
