1 with peel, grated english cucumber
1/4 Ounce(s) salt
2 yogurt cheese
3 Pound(s) crushed garlic
1/2 lemon pepper
Directions: 1. Combine cucumber and salt in large plastic colander in sink or over bowl. 2. Let stand at room temperature for 1 hour. 3. Push down cucumber, draining out as much liquid as possible. 4. Place in medium bowl. 5. Add yogurt cheese, garlic, and lemon pepper. 6. Refrigerate for at least 1 hour to allow flavors to blend.

Yogurt Cheese
4 plain skim milk yogurt
2 cheesecloth
Directions:
1. Line strainer with 2 layers of cheesecloth and placeover deep bowl.
2. Spoon yogurt into strainer.
3. Cover loosely with plastic wrap.
4. Drain for 24 hours in refrigerator.
5. Discard whey in bowl several times as yogurt drains.
6. Store yogurt cheese in covered container in refrigerator.
VANILLA YOGURT CHEESE:
Use vanilla-flavored skim milk yogurt (without gelatin) instead of plain skim milk yogurt.
