vegetable stock, mixing as you do so. Now add the chili paste, soy
sauce, sesame oil, salt, and sugar. Mix again. Set the sauce aside.

The next day, saute onion, carrots, garlic and ham hock in margarine for about 5 minutes. Add drained beans and chicken or vegetable stock.

oil until the onion is soft. Add the beans, bouillon, rosemary and water.
Simmer until heated thoroughly. For a thicker soup, remove 1/2 of the
mixture and process in a blender Cowboy bean bake Preheat oven to 350 degrees. Cook bacon in heavy medium skillet over medium heat until crisp, about 5 minutes. Transfer bacon to paper towels; reserve drippings. Add onion to skillet with drippings and cook until translucent, stirring occasionally, about Cuban black bean soup with marinated rice (light) Sort and wash beans; place in a large Dutch oven. Cover with water to a
depth of 2 inches above beans; let soak 8 hours.

rice. For a main dish, Cuban black bean chili Cook beans until soft, about 2 hours. Drain off water. Coat bottom of large
saucepan lightly with oil and saute onion and pepper until soft. Add
tomatoes, spices and beans, then cover with water. Stir in cilantro,
vinegar and hot sauce. Simmer for 1 Tuscan bean stew Heat oil in Dutch oven or 3-quart saucepan over medium heat until hot.
Add sage and garlic; cook and stir 2 to 3 minutes or until garlic is tender.
Stir in all remaining ingredients. Bring to a boil. Reduce heat to low; simmer
15 to 20 minutes or Rice and bean casserole Mix the beans, rice and tomato paste. Blend the garlic, onion, milk and
soy sauce. Combine everything but sesame seeds into a baking dish. Shake
the sesame seeds on top. Bake at 350 degrees F. for 40 min.
Optional additions: 1 egg, about 1/4 Asparagus & chicken in black bean sauce Marinating: With sharp paring knife, scrape chicken meat from thigh; slice
into thin strips across the grain. (Breast meat is not preferred for this
dish, as meat is too dry and spongy.) Combine sherry, soy, cornstarch and
