Directions: Combine the marinade ingredients in a bowl, set aside.
Slice the pineapple into slices, or into 1 inch chuncks. If you select chunks, soak bamboo skewers for 30 minutes in water.
Toss the pineapple in the marinade and let rest for 20 minutes, stirring once or twice.
For chunks, thread the pineapple pieces on to wooden skewers (use double skewers to make
the pineapple easier to turn). Space them about 1/2 inch apart.
Preheat the grill to medium. Grill the pineapple until glistening and golden, about 10 minutes per side, turnig them carefully Remove the pineapple rom the skewers to a bowl and serve atop the Big Boy Pork Chops.

Slow cooker salsa Cut a small slit in a couple tomatoes and insert garlic clove in slit. Put tomatoes and garlic in slow cooker. Chop jalapenos and remove seeds and place in slow cooker. Cover and cook on high for 2.5 - 3 hours until vegetables soft. Cool. In a blender or Pineapple salad Shake oil, lemon juice, soy sauce, and brown sugar in tightly covered
jar. Twist top from pineapple; cut pineapple into fourths. Cut fruit from
rind; remove core and any "eyes." Slice each fourth lengthwise; cut
crosswise into chunks.
Annasi (pineapple curry) Cut the pineapple in half lengthways, scoop out the flesh and cut into
cubes. Retain the half pineapple shells. Chop the onion and finely slice
the chillies Heat the ghee and fry the onion together with the curry leaves
and lemon grass. Add the c Pineapple coconut muffins [*I always add 2 tsp Ener-G egg replacer mixed with 2 T of water to this recipe, but I could not find a selection for egg replacers.]
