Jack lemmon's steak marinade 1 c Beef broth
1/2 c Soy sauce
3 oz Bourbon
1 Clove pressed garlic
1/2 ts Ground ginger
1/4 c Worcestershire sauce
2 TB Mesquite honey

Combine ingredients in a glass jar, sh Chile pepper jamaican jerk marinade Roast the pimento berries in a dry skillet until they are fragrant, about 2 minutes. Remove and crush them to a powder in a mortar or spice mill. Place all the ingredients in a blender or food processor and puree to make a sauce.
Store in the refrigera Ginger-tofu dressing Grate the ginger very fine. Combine all in a blender and puree until creamy.
Ginger-soy marinated halibut In a large mixing bowl, mix all ingredients. Let halibut fillets marinate for at least 15 to 20 minutes. R
emove halibut from marinade and pat dry with paper toweling. On a hot grill, cook halibut on both sides until thoroughly cooked. Remove from grill a Curry marinade *4 teaspoons purchased prepared ground curry powder can be substituted for
curry mixture.
In small skillet stir together all curry ingredients. Cook over medium
heat, stirring constantly, 2 minutes. DO NOT BURN. Remove from heat; let

Grilled halibut marinade Grilled honey lime chicken sandwiches Combine first 5 ingredients in a small bowl to make dressing. Sprinkle chicken with salt and pepper. Coat chicken in dressing and set aside for 10 minutes.
Grill chicken on an indoor electric grill, 6 or 7 minutes on each side.
Slice grilled chicken on Oriental plum sauce marinade Combine the plum sauce, hoisin, sherry and soy sauce in a nonreactive
mixing bowl. Whisk in the oils a little at a time. Add the ginger, garlic,
cilantro and chili pepper. Makes 2 cups. Recommended cuts: Chicken Breasts

Ginger-lime swordfish steaks ** Cut large fish steaks into pieces. Mix remaining ingredients in shallow
glass dish. Place fish in dish; turn to coat with marinade. Cover and
refrigerate at least 1 hour. Remove fish from marinade. Cover and grill
about 4" from medium coal Citrus and sherry marinade Combine. Makes 1 cup.
Red wine, juniper, and bay leaf marinade Whisk together everything but salt and pepper in a nonreactive bowl.
Arrange meat in a shallow nonreactive dish or resealable plastic bag.
Cover with marinade; rub gently into meat. Cover; refrigerate for length
of time in "Marinating Times" re Cold asparagus with sesame-ginger vinaigrette *To toast sesame seeds, put them in a small skillet and heat, stirring
frequently, until fragrant and just golden. Watch carefully.
Break off any woody parts of the asparagus stalks. Bring lightly salted

Brown bean marinade for barbecued pork 1. Mash brown beans to a paste, mince garlic. Then combine in a saucepan with stock, salt, sugar and soy sauce. Slowly heat, stirring, but do not boil.
2. Remove pan from heat. Then stir in sherry, Five Spices and food coloring, mixing well to blend. Add Thyme, shallot, and lemon marinade Whisk together juice, wine and oil in a shallow nonreactive dish. Arrange
meat or fish in a single layer in dish; turn to coat. Evenly scatter
thyme, shallots, and lemon slices over fish. Cover; refrigerate for length
of time specified on "Marinat Mandarin marinade Combine all ingredients and mix well. Refrigerate at least two hours to
allow flavors to blend.
Marinade for bbq Remove skin from thighs of chicken and marinate in sauce for 1-2 hours, the
bbq for half an hour on low heat to prevent flame up, do not char. Enough
fat will cook out of the meat to give a nice BBQ flavor.
Tahini ginger salad dressing Blend all these ingredients well. Variations can be made by omitting the ginger and adding more lemon juice to make Tahini-Lemon Dressing or 2 teaspoons crushed mint leaves for Tahini-Mint Dressing. Makes 2 cups.
