Ginger Glazed Carrots



Ingredients:
2 peeled, sliced carrot(s)
2 Tablespoon(s) butter or margarine
2 Teaspoon(s) sugar
2 ginger brandy
1 crystallized ginger
1/4 chopped fresh parsley
Directions: Cook carrots in lightly salted boiling water to cover until tender-crisp. Drain well. In a skillet over medium heat, melt butter. Add sugar and brandy; stir to blend. Add cooked carrots; toss to coat. Reduce heat; simmer several minutes. Remove from heat and place in serving dish. Garnish with crystallized ginger and chopped parsley. Serve warm.
