Ingredients: 1 Tablespoon(s) Ghee 1 medium Onion, thinly sliced 3 3/4 Cup(s) Vegetable Stock 2 1/2 Cup(s) Water 1 Inch Piece Ginger, grated 1/2 Teaspoon(s) Cayenne Pepper 1 Lemon, Juice of 3/4 Pound(s) Fresh Broccoli Florets |
Directions: Melt ghee over medium low heat and add onion. Cook until onion begins to brown,
stirring occasionally. Meanwhile, heat stock, water, and ginger in a saucepan for 5 to
6 minutes, but do not let it boil. Add onion, cayenne, lemon juice and broccoli to stock.
Cook over medium heat for 7 minutes, stir occasionally. Do not let soup boil. Serve
immediately.
