Directions: "Here's a very quick and easy steak sauce, mimicking A-1 sauce..I've
never measured any of it, just put it together....
Take all ingredients and put it in a cup and mix well. You can vary
the flavour you like the best, or jazz it up with more seasonings
(garlic? celery salt? thyme?) or even add a drop or two of smoke
flavoring. Regardless, it does well in a pinch when you don't have
any A-1 in the house."

Calamari in red wine and tomato sauce Separate the tentacles from the long body of the calamari, if not done
already. Slice the body, or calamari tubes into rings about 1/2 to 2/3 inch
thick, set aside.
In a saucepan, combine tomato sauce, red wine, lemon juice, olive oil,
garlic, black peppe Crispy chicken with asparagus sauce 1. In pie plate, dip chicken into egg; coat with bread crumbs.
2. In skillet over medium low heat, in hot oil cook chicken 15 minutes,
or until browned on both sides and no longer pink. Remove; keep warm.

until most are powdery. Combine all ingredients and blend well. Makes
about 1/3 cup. Will keep for short periods if refrigerated. Serve: On
slices of grilled flank steak or Lon Lemon butter sauce 1. Heat wine and lemon juice in saucepan at medium heat until reduced by 1/3rd.
2. Stir in cream and stir until it thickens.
3. Gradually add butter, a bit at a time.
4. Season with salt and pepper.
Berbere sauce Mix together the cumin, cloves, cardamom, black peppercorns, allspice, and fenugreek seeds.
Place in a small frying pan over medium heat. Stir constantly until they release their fragrance, about 1-2 mins. Do not burn or discolor the spices. Cool co Besciamella sauce Select a large, heavy saucepan. Melt the butter over medium heat, and stir in the flour. After removing the pan from the stove, add the milk and cream. Beat swiftly with a wire whisk until the flour mostly dissolves. Put the pan back on the heat and keep Agineres me avgolemono (artichokes with egg and lemon sauce The classic Greek sauce, avgolemono, is a great low-fat alternative
to the melted butter, mayonnaise or vinaigrette dipping sauces
usually served with artichokes.
Snap the stems off four large artichokes and trim the bases so that

Remove steak & place on grill, 4-5" from heat. Cook to desired

ingredients; thicken over med heat, stirring Chicken in mole sauce * Flour tortillas should be 7 to 8-inches in diameter and be cut
into
small pieces. ** Chicken breast halves should be boneless and the
total weight should
be about 4 lbs. Cover chile with warm water. Let stand until
softened Chicken dopiaza ( chicken in a fried onion sauce ) Cut chicken into serving pieces. Whole legs should be separated into
drumsticks and thighs. Whole breasts should be cut into 4-6 pieces,
depending on their size. Skin all the chicken pieces.
Chop half of the onions coarsely. Cut the remaining onions into Cajun catfish with spicy strawberry sauce * Strawberry Flavored Vinegar may be used instead of Red Wine Vinegar.
Place fillets in large shallow dish. Season fish with salt, black pepper
and hot pepper sauce; cover and refrigerate 1 hour. In small saucepan,
combine preserves, vinegar, soy sauce, c Onion and red-pepper sauce Put onions, 1/4 cup oil, the basil, salt and garlic in a 3-quart sauce pan over high heat. Cook, stirring often, 10 to 12 minutes until onions are tender bu tnot browned. Spoon into food processor ro blender. Add remaining ingredients and process until Kansas city barbeque sauce Blend all together in a large saucepan and simmer for 1 1/2 hours.
