Fudgy Chocolate Pudding



Ingredients:
1 Cup(s) Self rising flour
1/4 Cup(s) Unsweetened cocoa
1/2 Cup(s) Sugar
1/4 Cup(s) Margarine
1 Egg, lightly beaten
1/2 Teaspoon(s) Vanilla
1/2 Cup(s) Milk
2 Cup(s) Hot water
Directions: Preheat oven to 400F degrees. Spray a 1 1/2 quart round casserole with non-stick cooking spray. Sift flour and 2 tb + 2 ts of the cocoa into a medium bowl; set aside. In large bowl, with an electric mixer, beat 1/4 cup of the sugar and the margarine until light and fluffy. Beat in egg and vanilla. Fold into flour mixture alternately with milk; spoon into prepared casserole. In a small bowl, combine the remaining 1 tb + 1 ts cocoa and the remaining 2 tb sugar; sprinkle over the mixture in the casserole. Carefully pour hot water over the entire mixture. Bake for 30-35 minutes.
