Ingredients: 3 pita breads 1 Pound(s) romaine; torn into large pcs 3 Tablespoon(s) green onion; finely chopped 1 cucumber; peeled, deseeded, cubed 4 roma tomatos; cubed 12 Tablespoon(s) parsley; chopped 2 clove garlic; minced 1 Pinch(s) dried mint 4 Tablespoon(s) olive oil 1/2 lemon, juiced 1 Teaspoon(s) sumac; optional 1 salt; to taste |
Directions: Toast the pita breads and with a scissors, cut into bite sized pieces.
Set aside.
Toss lettuce, green onion, cucumber, tomatoes, parsley, garlic and mint in
a large mixing bowl.
Add lemon juice, olive oil and sumac.
Toss.
Add bread and then salt to taste.
Best if allowed to chill for a few hours before serving.
sumac is a maroonish colored middle eastern spice that can be found almost
anywhere.
It adds a nice color and flavor.
It's not necessary, but a very nice touch to this recipe.

Mediterranean bean salad with cheese 1. Rinse, dry and chop spinach, tomato and bell pepper.
2. chop onion and mince garlic, set side.
3. Rinse and drain kidney beans and chickpeas in colander.
4. Combine all ingredients in a large salad bowl.
5. In a small bowl, whisk oil, vinegar and black Mary's garlic bread Preheat oven to 375 degrees F. Mix all ingredients except the bread
together in a bowl. Spread the mixture onto the French bread. Wrap bread in
aluminum foil. Bake for 20 minutes. Unwrap and place under broiler to
