Ingredients:
3 pita breads
1 Pound(s) romaine; torn into large pcs
3 Tablespoon(s) green onion; finely chopped
1 cucumber; peeled, deseeded, cubed
4 roma tomatos; cubed
12 Tablespoon(s) parsley; chopped
2 clove garlic; minced
1 Pinch(s) dried mint
4 Tablespoon(s) olive oil
1/2 lemon, juiced
1 Teaspoon(s) sumac; optional
1 salt; to taste
Directions: Toast the pita breads and with a scissors, cut into bite sized pieces. Set aside. Toss lettuce, green onion, cucumber, tomatoes, parsley, garlic and mint in a large mixing bowl. Add lemon juice, olive oil and sumac. Toss. Add bread and then salt to taste. Best if allowed to chill for a few hours before serving. sumac is a maroonish colored middle eastern spice that can be found almost anywhere. It adds a nice color and flavor.
