We can thank the Dutch for two of America's favorite Christmas traditions:
Santa Claus and cookies. Santa Claus was originally St. Nicholas, a
Catholic bishop who was introduced to this country by Dutch immigrants and
was transformed"rounded out" was the term used by Peter Rose, author of
THE SENSIBLE COOK: DUTCH FOODWAYS IN THE OLD AND THE NEW
WORLD (Syracuse
University Press, 1989)into Santa Claus by Washington Irving and Clement
Moore. And cookies were koekje, the baked sweets that children loved all
year round. On St. Nicholas Day, December 6, Dutch children used to leave
their wooden shoes by the fireplace to be filled with cookies and sweets by
St. Nicholas. "Even today, in the Netherlands, people rush through dinner
and then come together to celebrate with hot chocolate and cookies and
candies," says Rose. "There's a sweet white bread called duivekater, honey
cake, candies, almonds and oranges. And of course speculaas, spice cookies
cut into the shape of windmills, animals or even St. Nicholas with his
staff."
Cream the butter and sugar until they are fluffy. Add the lemon zest and
eggs. Mix the flour, baking powder, cinnamon, nutmeg and cardamom, and stir
into the butter mixture with the almonds. Add enough milk to make the
dough malleable; turn out onto a counter and knead until smooth.
Chill well.
Roll out on a floured countertop. Cut into bars with a knife, a cookie
cutter or a speculaas mold.
Place on greased baking sheets and bake at 350 degrees for about 25
minutes, until golden brown.

less. This cookbook was published around 1968. Put chicken, water, onions,
celery, salt and pepper in kittle. Cover and simmer for 2 hours or until
fork tender. Boka dushi (dutch west indian chicken kebabs) This is the Dutch West Indian version of the classic Indonesian sat. Boka
means "mouth" and dushi means "sweet" in Papamiento, the musical dialect
that blends Dutch, Portuguese, Spanish, and West African languages. Kejap
manis, the anc Advocaat (dutch eggnog) Separate the eggs and beat the yolks with the salt and the sugar, until the
mixture is thick and creamy. Beat in the cognac, very slowly and put the

Hot dutch potato salad Dice bacon and pan fry. Add chopped onion and green pepper. Cook 3
minutes.
Add vinegar, salt, pepper, sugar and beaten egg. Cook slightly. Add cubed
potatoes, grated carrot and diced hard-cooked eggs. Blend and serve hot.
Variation: Add Dutch spiced beef * Steak should be 3/4 inch thick.
** Onion should be thickly sliced.

Cut steak into 4 pieces; rub with salt and pepper. Heat butter in large
frying-pan until hot but not brow Dutch west indian peanut sauce Combine broth and peanut butter in a small saucepan; cook over low heat 5
minutes or until smooth, stirring with a whisk. Pour peanut butter mixture
into a bowl; stir in the remaining ingredients. Serve at room temperature.

Custard recipe. Take a cup of the cheese or curd after it has been mashed
through a fine sieve and put it in a bowl. Pour in slowly, sweet milk or

celery, and raisins combined with mayonnaise. For a change, substitute
fresh chunks o Chicken pot pie (pa dutch) Cover the chicken with water and cook all ingredients in large pot until
chicken cooks off the bone. Skim fat from broth and use in dumplings.
Mix together well the flour, salt and chicken fat. Add water to make dough
ready to roll.
Roll out dough to 1/ Breakfast casserole (pensylvannia dutch cowboy) * Use either sharp or mild Shredded Chedder Cheese.
