Diced chicken with Peanuts (Gong Bao Ji Ding)



Ingredients:
3/4 Pound(s) chicken breast; cut into bite size pcs
3 Tablespoon(s) soy sauce
869/10000 Ounce(s) salt
417/10000 Cup(s) white wine
1/3 Tablespoon(s) cornstarch
1/4 Cup(s) raw peanuts
1/4 Cup(s) vegetable oil
1 Tablespoon(s) vinegar
326/625 Ounce(s) sugar
1 Tablespoon(s) cornstarch dissolved in; 1/4 cup chicken stock
4 dried red chiles; seeded and stemmed
2 green onions; sliced into 1 inch pcs
2 Tablespoon(s) ginger; minced
1 Tablespoon(s) garlic; minced
Directions: Season the chicken with the 1 T of soy sauce, and all of the salt and wine. Sprinkle with the dry cornstarch and mix well. Steep the peanuts for 30 minutes in lukewarm water. Remove the skins and stir-fry them in 2 T of oil until brown and crisp. Remove. Combine the remaining oil into the wok and heat until near smoking. Add the chiles and after they have started to brown, add the chicken and stir-fry until cooked. Add the onion, ginger and garlic and stir-fry for 30 seconds.
