Ingredients: 1/4 peeled and grated Granny Smith apple 1/2 fresh whole grain bread, toasted bread crumbs 1 lightly beaten egg 1 cayenne powder 2 curry powder 1 ground chicken or turkey 1/2 small chopped roasted red bell pepper 1/2 chopped onion 137/4377 Quart(s) olive oil 1/4 chopped mango chutney 2 thinly slice& chopped scallions |
Directions: Place the oil and chopped onion in a skillet over medium low heat, cook for 10 minutes, stirring occasionally. Reduce heat to low, add curry and cook for 1 minute (toasts the curry -- increasing flavor). Remove to a bowl and cool. Combine all remaining ingredients in a bowl, then add cooled onion. Form balls and brown the meatballs in skillet with additional olve oil.
