Directions:
In a large bowl, combine the lamb with the shallot, garlic, thyme, pepper and salt. Form 4 patties, each about 3/4 inch thick. Place on medium-hot grill and cook 5-6 minutes per side. (To cook on a stovetop, heat the oil in a grill pan over medium heat and cook the patties 6 minutes per side.) Serve in the pita pockets and top with Cucumber-Mint Relish, if desired. Garnish with mint leaves. |

Fr Mint julep ice cream *Do not increase the amount of liquor in this recipe, since it will prevent
the ice cream from hardening properly.
In a saucepan, bring the sugar, water and mint to a boil. Simmer over
medium heat for 5 to 8 minutes to make a simple syrup. Co Tapas baked polenta with spicy relish 1 Bring the milk to a boil in a saucepan. Reduce the heat and whisk in the cornmeal in a stream until it thickens, then stir constantly with a wooden spoon for 20 minutes until it leaves the side of the pan.
2 Remove from the heat and stir in the butter Chocolate mint ice cream In heavy guage saucepan, combine 1 1/4 cups heavy cream, milk, sugar and 1
cup of mint chocolate chips. Cook over low heat, stirring with wire whisk,

Double mint chocolate cookies Preheat oven to 400. Grease cookie sheets. In large bowl combine all
ingredients except flour. Beat until well mixed. Stir in flour until well
mixed. Drop rounded teaspoonfuls of dough 2 inches apart onto prepared
cookie sheets. Bake 7 to 9 minutes Cucumber and onion salad Combine sugar, vinegar, water, salt and pepper in a bowl. Add cucumber and onion and refrigerate.
Cucumber salad 1 Peel cucumbers, cut in half lengthwise and remove seed with a spoon. Slice
2 halves into thin crescents. Lay them on paper towels, sprinkle with
coarse salt and refrigerate, uncovered, for 1 hour.
Remove cucumbers from refrigerator and pat dry. Co Seared sirloin steak with olive relish Whisk together honey and vinegar in a medium bowl; season with salt and
pepper. Whisking constantly, pour in oil in a slow, steady stream; whisk
until emulsified. Stir in onion, garlic, olives, orange, and parsley; set
aside.
Season steak all over with Ginger, mint and honey marinade for lamb Combine all ingredients and mix well. Pour over lamb. Marinate at room
temperature for at least 2 hours or refrigerate overnight. Remove from
refrigerator 1 hour before grilling. Yield: 1 1/2 cups.
