Directions:
In a large bowl, combine the lamb with the shallot, garlic, thyme, pepper and salt. Form 4 patties, each about 3/4 inch thick. Place on medium-hot grill and cook 5-6 minutes per side. (To cook on a stovetop, heat the oil in a grill pan over medium heat and cook the patties 6 minutes per side.) Serve in the pita pockets and top with Cucumber-Mint Relish, if desired. Garnish with mint leaves. |

cream and yogurt in Brach's choco-mint ice cream In small bowl, whisk together egg and sugar. Stir in cream and milk. Stir
in chocolate covered mints pieces. Freeze according to manufacturer's
directions. Garnish with additional mints. Makes 1 pint.
NOTE: Good way to serve is to serve i Radish and cilantro relish Mix all ingredients in glass or plastic bowl. Cover and refrigerate
at least 1 hour.
Makes 3 cups of relish.
Easy apple relish Finely chop (or grind) cranberries, apples and orange.
Mix with sugar and refrigerate for a day or two before serving.
Great with chicken or turkey.
Cucumber relish salad Slice cucumbers paper-thin. Sprinkle slices with sugar, vinegar,
salt and pepper. Marinate for 20 minutes, drain off liquid, and toss
lightly with sour cream. Top with minced parsley.
Mint cooler 2 In a saucepan crush mint leaves with a spoon. Add water and lemon juice.
Stir in sugar. Bring to a boil; reduce heat. Simmer 5 minutes. Remove from
heat. Cool; pour into pitcher. Add orange juice. Cover and chill 2 to 24
hours.
To serve, remove Barbecued butterflied leg of lamb with mint and pocket bread 1. Lay meat boned side up. Slash about halfway through thickest portions,
as needed, and pull meat, patting cut edges down, to make the piece
relatively even.
