Cranberry-stuffed acorn squash 1/2 c Cranberries, fresh or frozen
1 x Orange, peeled and chopped
1/2 ts Ground Cinnamon
2 ts Honey
Cut the squash in half and remove the seeds. Combine the remaining
ingredients, except the honey or sweetener. Fill the squash with the Cranberry cinnamon bread Bring all ingredients except cranberries to room temp and add to machine,
in order listed. Set darkness control to medium. Select white bread and
press Start. Add cranberries at beep in mid-cycle.
Cranberry sherbet Cook cranberries with small amount of water until skins pop. (Less is best) Put through a food mill or sieve.
Boil 3 cups water and 2 cups sugar for 10 minutes.
Add to cranberries and freeze.
Makes 9-10 cups. Thaw about 15 minutes before serving.
Kirsch-schnitzel (veal cutlets with cherry sauce) Pat cutlets dry with paper towels. Heat oil in frypan and brown cutlets on each side approximately 3 minutes. Season with salt and pepper. Remove cutlets from pan and keep them warm. Blend wine and evaporated
