Couscous Salad



Ingredients:
1/4 balsamic vinaigrette
10 stems removed iced tea mix, flavored
1 seeded and finely chopped tomato
1 Cup(s) boiling water
1/2 Cup(s) couscous
Directions: In a large bowl, combine the couscous and bouillon granules. Stir in the water. Cover and set aside for 5 minutes or until the liquid is absorbed. Add the tomato, cucumber, and dressing and toss until blended. Cover and refrigerate until ready to serve. Just before serving, add 3 cups of spinach and the cheese to the couscous and toss. Line a serving platter with the remaining spinach leaves and spoon the couscous mixture over the top.
