Chickpea Stew
1/2 shredded cheese, cheddar 1/2 parsley 3 sauce, tomato 1 medium tomato, fresh 1 garlic, fresh cloves 1/2 pepper, red 1/4 small onion, yellow 1/2 beans, chickpeas, canned 1/4 oil, olive |
Directions:
1. Prepare couscous according to recipe directions and set aside. 2. Chop onions, pepper, and tomato; mince garlic. 3. Drain and rinse garbanzo beans to remove excess sodium. 4. Heat oil in a nonstick skillet over medium heat; add onions, bell pepper, and minced garlic and sautA?AŠ for 3 - 4 minutes or until onions are transl ucent. 5.Add chopped tomato and cook for about 1 minute more. 6. Stir in tomato sauce and parsley and simmer for 2 or 3 minutes. 7. Stir in drained chickpeas and gently heat for about 5 minutes, until heated through.
