1 Ounce(s) salt
12 egg
1/8 Quart(s) mayonnaise
1/6 Ounce(s) paprika
1/16 Cup(s) mustard
1 Ounce(s) vinegar, white
1/4 Ounce(s) food coloring
Directions: WHEN YOU COOK YOUR EGGS MAKE SURE THEY DO NOT BOIL. 1. Place eggs in single layer in sauce pan. Cover completely with water and add 2T of salt and about 1T of vinegar. 2. Cover and bring to boil. Remove from heat, keep covered and allow to sit undisturbed for 25 minutes. 3. Drain water and plunge eggs into ice water. Cool completely before peeling and remove yolks. 4. Color eggs after shelling them and removing the yolk for a festive presentation: A. for each color bring 2/3C water to a boil B. stir in 1/4t vinegar and liquid food coloring as desired C. carefully drop cooked egg white and leave it in the water until it reaches the color you want (color will become more intense out of the water). D. drain well on a rack until cool and fill. 5. Mash yolk using your fingers and stir in mayo and mustard. Fill eggs (using pastry bag) with yolk mixture.
