Coconut Pecan Sweet Potatoes



Ingredients:
2 peeled and shredded sweet potato
1/3 Cup(s) brown sugar, packed
1/4 butter, melted
1/4 coconut
2 54/625 Ounce(s) broken, toasted pecans
87/2000 Ounce(s) ground cinnamon
417/10000 Ounce(s) vanilla extract
Directions: In a 3-1/2 qt slow cooker, combine potatoes, sugar, margarine, coconut, pecans and cinnamon. Cover; cook on LOW for 6 to 8 or on HIGH for 3 to 4 hours. Stir in coconut flavoring and vanilla. Sprinkle with toasted coconut if desired.
