City Ham (Alton Brown)



Ingredients: Directions: Ham in natural juices. Use a utility knife to slice around ham and create diagonal pattern. Place the ham on a towel in a roasting pan (to drain fat). Tent with foil. Bake 250F 3-4 hours until 130F. Pull off crust/rind from the outside of the ham. Layer next 4 ingredients on ham: 1 layer mustard 1 layer dark brown sugar 1 layer bourbon - spritzed on 1 layer gingersnap cookies (crushed in food processor) and sprinkled on Bake 350F for 1 hour or until 140F internal temperature.
