Set on the center rack of a a preheated 375øF. oven and bake for
about 1 hour, or until potatoes are tender when pierced with a fork.

spoon or a potato masher. Set aside.

to medium-low; simmer until most liquid has evaporated, about 45 minutes.

1. Bring a large pot of salted water to a boil. Drop in potatoes, and cook until tender but still firm, about 15 minutes.
