Chocolate Covered Cherries



Ingredients:
1/2 Cup(s) heavy cream up to 1 cup
60 Maraschino cherries w/stems
2 Tablespoon(s) cognac
3 Tablespoon(s) Butter
3/4 Pound(s) thinly sliced mushrooms - about 5 cups
3 Tablespoon(s) Light corn syrup
3 Tablespoon(s) finely chopped shallots
2 Cup(s) Powdered sugar
4 Tablespoon(s) unsalted butter or margarine
1 Pound(s) Chocolate, melted
2 Pound(s) skinless, boneless chicken breasts
Directions: Drain cherries for several hours. Combine softened butter and corn syrup. Stir in powdered sugar. Chill if too soft. Shape 1/2 teaspoon mixture around each cherry. Place on baking sheet with wax paper and chill until firm. Dip cherries into chocolate by stem. Chill for 1 to 2 weeks.
