Directions: Preheat oven to 350 degrees. Scrub potatoes and prick with a fork. (Do not wrap in foil.) Bake sweet potatoes for 45 minutes. Cool. (Potatoes can be held at this point for a few hours or refrigerated for the next day.) Peel and cut into wedges. Melt butter with chipotle; stir in maple syrup and salt. Place potato wedges in a single layer in a shallow baking dish. Brush butter mixture onto potatoes. Return to oven until heated through.
