Directions: Pre-heat oven to 325
Mix together flour, sugar, baking soda, and salt together into a bowl. Cut in the butter until mixture resembles cornmeal. Add egg and almond extract. Mix well. If the dough doesn't not seem to be fully mixed, leave it aside for 10-15 minutes, giving the butter a chance to reach room temperature. Mix again.
Roll dough into 1 inch balls. Place them 2 inces apart on an ungreased cookie sheet. Place an almond on top of each cookie and press down to flatten slightly.
Bake in over for 15-18 minutes and cool on rack.
