Directions: 1) Put the coconut milk into a medium sized pot.
2) Add the Chicken stock.
3) Add the ginger, lemon grass,kaffir leaves and cook for 5 mi
nutes stirring occasionaly.
4) Cut the chicken into small (2cm) cubes.
5) Add the chicken, salt, fish sauce, sugar and lime juice.
6) Simmer until the chicken is Completely Cooked.
7) Add the sauteed mushrooms
8) Serve garnished with chopped Cilantro on top.
