Veal tenderloin with baby arugula salad Preheat oven to 350F . Heat oil in heavy iron skillet and sear meat on
all sides until brown. Place veal in oven for 20 minutes or until
thermometer reads 120-125F . Let rest 10 minutes. Cover with foil and
refrigerate until ready to use. Can be roas Heringstopf mit saurer sahne (herring salad with sour cream) Sauce:
Blend thoroughly sour cream, yogurt, lemon juice and sugar.
Salad:
Peel onions and cut into thin slices. Peel and quarter apples, remove
cores and but into thin wedges. Blend onions and apples with sauce. In a
dish arrange herring and apple-onio Buttermilk chicken Wash chicken breasts remove skin and visible fat,leaving the bone.
Pat dry with paper towel. Pour buttermilk in shallow bowl. In second
bowl, mix flour, pepper and salt. Put skillet on high heat and add
canola oil about 1/2" deep.
Dip each breast in Garlic chicken breasts w/balsamic vinegar Wash mushrooms, pat dry. Split chicken breasts. Season flour with
salt and pepper and dredge chicken. Cook chicken in hot olive oil
until brown. Add garlic cloves. Turn chicken and add mushrooms. Cook
about three minutes. Add vinegar, broth, bay Marinated chicken wings 2 Mix all ingredients except chicken together. Set aside. Arrange chicken in baking pan, pour marinates over. Marinate overnight covered in the refrigerator. Bake at 400 degrees for 1 1/2 hours. Turn wings after about 45 minutes.
Cajun chicken Combine all and marinade 2 hours to 2 days.
Greek pasta salad 1. Toss and stir together for dressing:
olive oil, white vinegar, green onion, basil, oregano, garlic salt, and parmesan cheese.
2. Cook pasta and drain.
3. Add cheese, peppers, tomatoes and olives. Toss with above salad dressing. Chill before serving.
Italian chopped salad Whisk first 4 ingredients in medium bowl to blend. Season dressing to taste
with salt and pepper.
Place remaining ingredients in large bowl. Toss with enough dressing to
coat. Season salad with salt and pepper.

Baja chicken pasta salad * The chicken breast should be boneless, skinless and weigh
about 3/4
of a pound. ** You should use 1 6-oz package of diced mixed
fruit. There should
be about 1 1/2 cups of the mixture. Heat enough salted water to
cover Jerk chicken wings In a food processor fitted with a steel blade, combine all the
ingredients except the chicken wings. Process for 10 to 15 seconds at
high speed. Pour the marinade into a bowl and add the wings.
Refrigerate for 4 to 6 hours, stirring after 3 Fettuccine with chicken breasts Cook fettuccine according to package directions; drain. Preheat oven to 425F. Stir together dressing and mustard; set aside. Pour fettuccine into oiled baking dish. Saute chicken in butter in a large skillet. Transfer cooked chicken to the bed of fettucci Wilted spinach salad Wash spinach; dry well between paper towels. Tear into large bite-size
pieces and store in an airtight container in the refrigerator until 20
minutes before ready to use. Allow spinach to come to room temperature
before using.
