Chicken Fried Rice



Ingredients:
1 1/2 Ounce(s) soy sauce
3/4 sliced green onion
1/16 Quart(s) olive oil
24 Ounce(s) chicken broth
3 beaten egg
151/193 Pound(s) cooked and cubed chicken breast
1 1/2 rice
2 shredded lettuce
1/2 thinly sliced celery
Directions: Cook and dice chicken breasts. Mix chicken with soy sauce and let stand. Heat oil in wok on medium-hi. Add rice and stir until golden brown. Add chicken broth (careful may splatter and smoke). Cover and reduce heat to simmer. Simmer for 20 minutes. Add celery and onion last 5 minutes and remove cover so excess moisture will evaporate out. When liquid is absorbed push rice to one side and add eggs. Let eggs cook until almost set then mix into rice. Add lettuce and serve immediately.
