Ingredients: 16 To 18 zucchini blossoms 1/2 Cup(s) grated monterey jack cheese 1 Cup(s) Milk or half & half 1 Jalapeno, seeded and chopped 1/2 Cup(s) Chopped prosciutto or ham 1 Teaspoon(s) Ground cumin 1 Teaspoon(s) Chopped fresh oregano 2 Tablespoon(s) Chopped parsley 1 medium Tomato, peeled, seeded 2 Tablespoon(s) Double cream;-=OR=- better 1 Onion, chopped 4 large Tomatoes, seeded and chopped 1 Cup(s) Chocolate wafer crumbs |
Directions: Preheat oven to 325 F.
Mix filling ingredients, adding tomato last. Add salt and pepper to taste.
Stuff squash blossoms carefully with about 1 tb. of filling each; don't
overfill. Drizzle olive oil over blossoms. Place in a well-oiled shallow
casserole. Cover dish with foil and bake 15 minutes. Uncover and bake 15
minutes longer. While squash blossoms are baking, prepare sauce. Spoon
sauce over squash blossoms and serve immediately or serve at room
temperature.
To make the tomato sauce, heat olive oil in a skillet. Add onion and saute
until softened. Add tomatoes, wine and tomato paste. Let mixture cook
uncovered until reduced and slightly thickened, about 5 to 8 minutes,
stirring occasionally. Add salt and pepper to taste.
Yield: Serves 4 to 6 as a main dish.

Spicy hot stuffed poblano peppers Spicy Hot Stuffed Poblano Peppers
Ingredients:
6 poblano peppers
1 1/2 C. diced chorizo
2 T. olive oil
1/2 C. diced onions
2 cloves garlic, finely minced
2 tomatoes, diced
4 canned chipotle chiles in adobo sauce, diced
1 tsp. cumin
1/2 tsp. oregano
1 C. c Hot stuffed cheddar potatoes Cut potatoes lengthwise. Scoop centers into a bowl, leaving 1/4"
shell. Smoothly combine soup and milk, add cheese. Cook and stir over
medium heat till the cheese melts. Keep warm. Break up potato pieces
add broccoli and chicken. Stir in 1 cu Kurinoye file so smorchkani ( stuffed chicken breast ) Bring 1/2 cup of the chicken stock to a boil and pour over the morels
in a heatproof bowl. Soak for 1 hour, then drain, (Reserve the
liquid) and chop fine. Strain the soaking liquid through a coffee
filter and set aside. Place each chicken breast half b Ham-stuffed mushrooms Chop mushroom stems.
Cook stems and onions in 2 T. butter; stir in flour and salt, cook slightly.
Add milk; cook until thick and bubbly, stirring constantly.
Stir in ham mixture.
Fill caps.
Sprinkle with bread crumbs.
Place in a greased baking dish.
