Directions: *Chard can be mixed with spinach and kale and other in-season greens.
Preheat oven to 375 F.
Heat oil; saute garlic and onion until golden. Add chard (in small
amounts) until it is cooked down. Make a bechamel sauce; melt butter,
stir in flour, add milk and cheese. Stir until thick, then mix into
cooked greens.
Fill center of each tortilla, roll up, place in lightly oiled baking
dish. Spread salsa over all; bake in hot oven for 25 minutes.

garlic. Blend flour into oil. Stir in green chili sauce and heat
thoroughly. If mixture is too thick, add water. Add salt to taste.
Layer tortillas with sauce, minced onion and Baked chicken cheese enchiladas Preheat oven to 325 degrees F.
In a medium bowl cream together the cream cheese and the sour cream. Stir
in 1/2 cup of the salsa. Stir in 1 cup of the grated cheese. In a second
bowl toss together the chicken, the corn, cumin, cayenne, salt, pepper, Light swiss enchiladas Servings: 4
Can use fat-reduced Swiss or Jack cheese, grated, 2 cups. Omit salt
if stock is salted.
Preheat oven to 350 degrees. Wrap tortillas tightly in foil and

Enchiladas (beef) Filling:
1. Brown ground beef and drain fat as necessary. Add onion, green chili, corn, and beef broth.
2. Simmer for 10-mins or so.
Construction:
1. Place a tortilla in a hot skillet to warm (30-secs), then dip into enchilada sauce and add 3 to 4 tbl Chicken enchiladas 2 Sauce:
Cook onion, garlic, and pepper in butter until onions are tender. Stir flour into sour cream; add to onion mix. Stir in soup and chili peppers all at once. Cook and stir until thickened and bubbly. Remove from heat, stir in ? cups cheese.
Filling: Old style enchiladas * 1-2 cups of oil for cooking corn tortillas.

Dip each tortilla in remaining heated enchilada sauce Skinny enchiladas Heat oven to 350 F. In medium bowl, combine broccoli, chicken, roasted
peppers, onions, and 1/4 cup of the enchilada sauce; mix well.
Spoon 1/3 cup chicken mixture onto center of each tortilla. Sprinkle each
with 1 tablespoon of the cheese. Roll u Vermicelli and swiss chard soup Place the tomatoes, garlic, onion and Serrano chiles into a blender or food
processor and blend until smooth. Heat the olive oil in a large pot. Add
the blended ingredients and saute over medium heat until reduced and
thickened, about 4 minutes. Add Tricia's enchiladas Mix chicken, beans, and most of cheese in a large bowl. Scoop onto tortillas. Fold or roll tortillas and place, seam side down, in a greased 13x9" baking pan. Pour red sauce over all and bake at 350 for 20 minutes. Sprinkle cheese on top and bake Avocado/zucchini enchiladas Heat oven to 325F degrees.
Cut the avocado in half and scoop the flesh with a teaspoon into a bowl.
Then mash it with a fork, add 1 clove crushed garlic, 1/2 teaspoon chopped
chile, and lime juice. Season with salt and pepper to taste.
Heat oil * turkey enchiladas Combine turkey with sour cream, cheese and 1 ts salt. Heat 1/3 c oil and
dip tortillas in until soft and drain. Stuff with turkey mix and roll.
Arrange side-by-side with seam side down in shallow pan.
