3 Tablespoon(s) plain nonfat yogurt (A; B, AB); or soy
1/3 Cup(s) maple syrup or honey
1/3 Cup(s) Turbinado sugar; optional
2 organic eggs
1 Cup(s) organic carrot; finely shredded
1 Teaspoon(s) cinnamon (A; AB); allspice (O); or clove
1/2 Cup(s) drained canned crushed pineapple; optional
1 Cup(s) brown rice flour
1 Teaspoon(s) baking soda
1 Teaspoon(s) baking powder; (corn free unless A)
1/2 Cup(s) chopped walnuts; optional

Directions: Preheat oven to 350F (175C). Oil a 13" by 9" baking pan. In a large bowl, combine oil, maple syrup or honey, Turbinado sugar (optional) and eggs. In a small bowl, combine flour, baking powder, baking soda, and cinnamon or other spice; add to wet mixture. Stir in yogurt, pineapple, carrots, walnuts and raisins, mixing thoroughly. Pour into prepared pan. Bake 25 to 30 minutes, or until a wooden pick inserted in center comes out slightly moist with crumbs. Set on a wire rack and cool in pan. Cut into 20 bars.
