for the jerk recipe, I thought I'd just go ahead and post it.
I started with recipes from "Jerk: Caribbean crabmeat canapes Melt 2 T. butter in skillet. Add onion and garlic and saute until
transparent. Add coconut and saute until lightly browned. In separate bowl,
combine crabmeat, egg, cream, curry powder and salt. Add onion/
garlic/coconut mixture and mix well.
Caribbean chicken stew Prep: 15 min, Cook: 45 min.
Melt half the butter in a large soup pot over medium high heat. Cook chicken 8-10 minutes, turning occasionally until browned on both sides. Sprinkle ginger and pepper over chicken. Stir in next 4 ingredients and salt to taste Grilled caribbean chicken Heat grill. In a small bowl, combine all ingredients except chicken; mix well. Rub mixture on chicken breast halves. Let stand at room temperature for 15 minutes to marinate. are translucent. Add all other ingredients and cook for 1/2 hour under slow
to medium heat. Puree in a food processor and strain through a fine sieve.
Season and serve Caribbean okra salad 1. In a medium saute pan, heat 1 tablespoon oil. Add okra and saute 2
minutes. Sprinkle with salt and pepper. Add water, cover and cook
over low heat for about 7 minutes, or until just tender. (Add more
water if needed.) Transfer to a serving p Caribbean chicken breasts Preheat oven to 350F.
Combine crumbs, walnuts, 4 tablespoons butter, corn syrup and salt.
Loosen skin and stuff chicken with mixture. Secure with wooden picks.
Saute chicken in 2 tablespoons hot butter; arrange in baking pan.
