Ingredients:
3 Tablespoon(s) olive oil,split
3 Cup(s) onions,chopped
4 garlic, minced
1 1/2 Cup(s) white rice
3 Cup(s) water
1 1/2 Tablespoon(s) fresh ginger,minced
1/2 Teaspoon(s) dried thyme
1/2 Teaspoon(s) ground allspice
2 Can(s) black beans, drained and rinsed
12 Tablespoon(s) orange juice
Directions: Heat 1 tablespoon oil in medium saucepan over medium-low heat. Add 1 cup onion and 1 garlic clove and saute until tender, about 5 minutes. Mix in rice and stir 1 minute. Add 3 cups water and bring to a boil. Reduce heat to low, cover and simmer until water is absorbed and rice is tender, about 50 minutes. Meanwhile, heat remaining oil in heavy large skillet over medium-low heat. Add remaining onion and garlic and saute until almost tender, about 5 minutes. Stir in ginger, thyme, and allspice and saute until onion is very tender, about 5 minutes. Stir in beans and orange juice. Cook until mixture thickens slightly, stirring occasionally, about 15 minutes. Spoon rice onto platter. Top with black beans.
