Ingredients: 3 Tablespoon(s) olive oil,split 3 Cup(s) onions,chopped 4 garlic, minced 1 1/2 Cup(s) white rice 3 Cup(s) water 1 1/2 Tablespoon(s) fresh ginger,minced 1/2 Teaspoon(s) dried thyme 1/2 Teaspoon(s) ground allspice 2 Can(s) black beans, drained and rinsed 12 Tablespoon(s) orange juice |
Directions: Heat 1 tablespoon oil in medium saucepan over medium-low heat. Add 1 cup onion and 1 garlic clove and saute until tender, about 5 minutes.
Mix in rice and stir 1 minute. Add 3 cups water and bring to a boil. Reduce heat to low, cover and simmer until water is absorbed and rice
is tender, about 50 minutes.
Meanwhile, heat remaining oil in heavy large skillet over medium-low heat. Add remaining onion and garlic and saute until almost tender,
about 5 minutes. Stir in ginger, thyme, and allspice and saute until onion is very tender, about 5 minutes. Stir in beans and orange juice.
Cook until mixture thickens slightly, stirring occasionally, about 15 minutes. Spoon rice onto platter. Top with black beans.

completely with cold water. Let the beans soak overnight (or for at least
8 hours).
Drain the beans and transfer them to a large pot. Add the 3 cups water.
