Ingredients:
1 pie shell
1/2 Ounce(s) extra virgin olive oil
1 Pound(s) onions; cut into rings
2 eggs
137/4377 Gallon(s) milk
1/2 Cup(s) heavy cream
4/23 Ounce(s) salt
1 Teaspoon(s) ground pepper
2 Ounce(s) gorgonzola dolce
Directions: Bake dough until golden brown following package instructions. Let cool compeletely on wire rack. Preheat oven to 400F. Heat oil in a large heavy-bottom skillet over low heat until hot but not smoking. Cook onions, stirring frequently, until golden brown, about 30 minutes. Let cool. Whisk eggs, milk, cream, and salt in a medium bowl; season with pepper. Crumble in cheese, and stir in caramelized onions. Pour mixture into pie shell; bake until puffed and pale golden brown, 30-35 minutes. Let cool at least 30 minutes before serving. Contributor: Martha Stewart Living June 2004
