Ingredients: 1 1/2 Cup(s) Flour 1 Envelope Cappuccino 1/2 Cup(s) Sugar 1 1/2 Teaspoon(s) Baking powder 1/2 Teaspoon(s) Ground cinnamon 1/4 Teaspoon(s) Salt 2 Eggs, slightly beaten 1/2 Cup(s) Chilled coffee or milk 1/2 Cup(s) Sour cream 1/4 Cup(s) Butter or margarine, melted 1/2 Cup(s) Semi sweet chocolate chips |
Directions: Heat oven to 375 degrees.
Mix flour, cappuccino, sugar, baking powder, cinnamon and salt in a large
bowl; set aside. Stir eggs, coffee, sour cream and melted butter in a small
bowl until well blended. Add to flour mixture; stir just until moistened.
Stir in chocolate chips. Spoon batter into greased or paper lined muffin
pans, filling each cup 2/3 full.
Bake 30 minutes or until toothpick inserted in center comes out clean.
